Rockstar Clams & Mussels

This dish is a rockstar, and you dear reader are a rockstar for making this for someone you love. Or tolerate depending on the day. Who wouldn’t want a perfectly seasoned, light and refreshing bowl of delights from the sea? This clams and mussels dish is always a show stopper, a panty dropper and plane hopper. Really, I’ve had someone hop a plane to get to me so I’d make them this dish. Its that good.

Rockstar Clams & MusselsĀ 
1 lbs mussels cleaned and debearded (Literally the only time I will be ok with a beard being removed)
1 lbs clams rinsed
1 cup of wine (or one bottle of beer, use alcohol you would drink not cheap stuff!)
2 tablespoons minced garlic
1 lemon (zested, and squeezed)
1/4 – 1/2 cup of flat leaf parsley
2-4 tablespoons good olive oil

Start with a heavy bottom pan, place two tablespoons of good olive oil and raise the heat up to medium. Add your garlic, stirring often until its golden brown. Add the clams, shake them around the pot, cover with the lid for about 90 seconds. Next add the mussels and wine or beer and most of the parsley. Cover, shaking every 30 seconds or so for 3-4 minutes.

Once all the seafood has opened, transfer to a serving bowl, pour some of the liquid into each bowl. Before serving sprinkle each bowl with fresh parsley. Serve with crusty bread to sop up the sauce.
